BBQ Marinades

Looking for super flavorful meat and fish with minimal effort?

The secret is a good marinade. These three tried-and-true ones are an excellent place to start. Mix them up, toss with a protein, and stick in the fridge for anywhere from thirty minutes (if you’re in a rush or marinating something delicate like fish), to a couple of days (great for sturdier chicken, beef, and pork—the more time they sit, the more flavor they will soak up). When you are ready to cook, fire up the grill and get ready for the compliments to roll in.

Lemon, Garlic & Chili Marinade

Italian dressing marinade: garlicky and tangy with just a hint of spice, making it perfect for chicken, fish, and veggies.

2 garlic cloves, grated or very finely minced
zest and juice of 1 lemon
1 teaspoon chili flakes
4 teaspoons chopped thyme leaves
6 tablespoons olive oil
1 teaspoon kosher salt

Tamari & Ginger Marinade

Asian marinade: perfect for yakitori-style skewers with vegetables, chicken or fish, it is also easy to toss with noodles and veggies for a quick weeknight dinner.

¼ cup tamari
1 ½ tablespoons coconut sugar or honey
1-inch piece ginger, grated or finely minced
2 garlic cloves, grated or finely minced
2 tablespoons sake
3 tablespoons chopped cilantro leaves and stems

Chipotle Marinade

Slather this marinade on just about anything: chicken breast, pork shoulder, corn, or summer squash. This marinade is perfect to add to a sofrito, when making chili or tortilla soup.

2 whole chipotle chiles in adobo sauce
1 tablespoon adobo sauce
4 garlic cloves
juice of 1 lime
1 teaspoon salt
½ teaspoon cumin
½ teaspoon coriander
¼ cup packed cilantro leaves
2 tablespoons neutral oil
